No-egg spelt cheese avocado pancakes
- 60 g (slightly more than 1/2 cup) spelt flour
- 125 ml (1/2 cup) soy milk
- 1/2 sliced avocado,
- 2 shaved slices yellow cheese
- 1/2 tsp baking powder
- 1/4 tsp soda
- pinch of salt and pepper
- fat for frying
- maple syrup/Agave/honey or tomato sauce to give
Mix dry ingredients in a bowl. Add milk & cheese and mix all together. Heat a large nonstick skillet or griddle over medium/medium-low heat. Coat with cooking spray. When hot, spoon the batter into the skillet by the 1/4 cupful. Evenly distribute most of the avocado slices on top of the pancakes, reserving a few slices (3) for garnish.When bubbles appear on the surface of the batter, (about 1-2 minutes), the pancakes are ready to be flipped. Flip pancakes and let cook for another minute or so, or until golden brown. Serve with favourite adds ;)
