Eggs in Avocado
Ingredients
1/2 avocado
1 egg
Instructions
Heat skillet on medium-low. Lightly spray with oil.
Slice avocado lengthwise with skin on. Remove seed and use a small cookie cutter to make a hole in the center.
Place avocado slice in pan. Crack a medium-sized egg into avocado hole.
Cover and cook until egg is cooked as desired.
Season with salt and pepper.

No-egg spelt cheese avocado pancakes
60 g (slightly more than 1/2 cup) spelt flour
125 ml (1/2 cup) soy milk
1/2 sliced avocado,
2 shaved slices yellow cheese
1/2 tsp baking powder
1/4 tsp soda
pinch of salt and pepper
fat for frying 
maple syrup/Agave/honey or tomato sauce to give
Mix dry ingredients in a bowl. Add milk & cheese and mix all together. Heat a large nonstick skillet or griddle over medium/medium-low heat. Coat with cooking spray. When hot, spoon the batter into the skillet by the 1/4 cupful. Evenly distribute most of the avocado slices on top of the pancakes, reserving a few slices (3) for garnish.When bubbles appear on the surface of the batter, (about 1-2 minutes), the pancakes are ready to be flipped. Flip pancakes and let cook for another minute or so, or until golden brown. Serve with favourite adds ;)
